One Pot Pasta with Chicken and Tortiglioni

Ingredients for 4 servings:

  • 350 g tortellini
  • 400 g chicken breast fillet(s)
  • 1 bell pepper(s), red
  • 1 onion(s)
  • 3 garlic cloves
  • 1 tbsp herbs de Provence
  • 750 ml vegetable stock
  • 250 ml white wine
  • 400 g tomato(s), chopped, 1 can 425 g
  • 40 g Parmesan
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and finely chop the onion and garlic. Wash, deseed, and finely dice the bell pepper. Combine all ingredients, except the Parmesan, in a large pot and bring to a boil. Reduce heat and simmer uncovered for about 15-20 minutes, stirring occasionally. Season the pasta again with salt and pepper. Serve on plates and sprinkle with Parmesan.
