One-pot pasta with zucchini and mushrooms

Ingredients for 5 servings:

  • 500 g pasta of your choice (we like spaghetti)
  • 1 zucchini
  • 250 g mushrooms
  • 4 sprigs of fresh thyme
  • 1 sprig(s) rosemary, small, fresh
  • 2 garlic cloves
  • 1 ½ liters vegetable broth
  • 100 ml cream
  • salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Ready in 20 minutes

First, prepare the vegetables: quarter the zucchini and cut into fairly small pieces. Split the mushrooms in half and cut into pieces roughly the same size as the zucchini. Peel the garlic and roughly chop. Then add the first seven ingredients to a large pot. Cook over medium heat until the spaghetti is al dente, then cover the pot and let it simmer for another five minutes. Stir frequently to prevent burning. If the liquid evaporates too quickly and the pasta isn’t yet soft enough, simply add a little more water. Finally, add the cream and season the one-pot pasta with salt and pepper.
