Ingredients for 4 servings:
- 1 zucchini
- 2 peppers
- 1 onion(s)
- 2 cloves garlic
- 500 g pasta
- 750 ml vegetable stock
- 140 g tomato paste
- ½ tsp sumac
- ½ tsp smoked paprika powder
- 1 tsp mixed herbs (thyme, oregano, savory, rosemary)
- salt and pepper
- Yeast flakes and pumpkin seeds
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Clean and dice the vegetables. Sauté the onion and garlic until translucent. Add the paprika and sumac and sauté briefly. Then add the zucchini and bell pepper to the pot and sauté for about 5 minutes. Deglaze with the vegetable stock, add the tomato paste, and stir in. Add the pasta and stir in. Season with the herbs. Cover and simmer the mixture for 10-15 minutes over medium heat. Add more water if necessary. When the pasta has reached the desired consistency, season with salt and pepper. The dish is now ready to serve. I recommend garnishing it with nutritional yeast and pumpkin seeds.
