Ingredients for 2 servings:
- 160 g spaghetti
- 200 g sliced sausage
- 125 g celery
- 1 small pear(s) (Williams Christ), ripe
- 1 m.-large onion(s), red
- 600 ml vegetable stock
- 75 ml dry white wine
- 150 g sour cream, 10% fat
- 1 tbsp honey, liquid
- 1 tbsp walnut vinegar
- 20 g butter
- some basil leaves
- n. B. Pepper, black
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
Wash the celery and cut into thin slices. If necessary, halve thicker stalks lengthwise first. Peel the onion and cut lengthwise into wedges. Peel the pear, remove the core, and slice and then slice the pear. Roll up the basil leaves and cut into thin strips. Cut the sausage meat lengthwise, peel it, and then cut the sausage meat into small cubes. Melt the butter in a deep pan, add the sausage meat cubes, and cook over medium-high heat for about 3 minutes. Then add the onion and celery to the pan and sauté for another 4 minutes. Increase the heat slightly, stir in the honey, and let it caramelize for about 1-2 minutes. Then deglaze with the white wine and simmer for another 1 minute. Top up everything with the vegetable stock, stir in the sour cream, and bring to a boil. Now add the spaghetti, fanned out, and let it cook with the lid on for about 10-11 minutes. Then remove the lid, add the pear, and simmer briefly until the pasta is al dente and the remaining sauce has a light thickening. Finally, season generously with freshly ground black pepper and walnut vinegar. Sprinkle with basil when serving. Tips: Add the walnut vinegar at the end, otherwise the nutty flavor will evaporate. If you don’t have walnut vinegar, use a little light balsamic or white wine vinegar and sprinkle broken walnuts over the dish. You can of course use other pears instead of a Williams Christ pear, such as a Conference pear. The pear should, however, be sweet and juicy and, like the Williams Christ, have a distinct pear flavor. If you want to use a different amount of pasta, you will also have to adjust the amount of vegetable stock.
