Ingredients for 2 servings:
- 150 g leaf spinach, frozen
- 1 onion(s)
- 1 garlic clove(s)
- 2 Vienna sausages
- 1 tbsp olive oil
- 75 ml vegetable broth, hot
- 75 ml cream
- 200 g tortellini, fresh
- salt and pepper
- some Parmesan, freshly grated

Thaw the spinach. Roughly dice the onion and garlic. Slice the sausage. Heat olive oil in a wide pan. Sauté the onion and garlic for about 2 minutes. Add the tortellini, spinach, sausage, broth, and cream, stir everything together, and season with salt and pepper. Bring to a boil and simmer on low heat with the lid on for about 10 minutes. Finally, season to taste and serve with the Parmesan cheese.
