One-week Red Cabbage
The perfect one-week red cabbage recipe with a picture and simple step-by-step instructions.
- 1 piece Fresh red cabbage
- 0,5 liter Apple juice
- 0,5 liter Red wine
- 0,2 liter Port red
- 0,2 liter Orange juice
- Cinammon
- Clove
- Laurel
- Pimento
- Salt
- Tellicherry pepper
- 1 tbsp Duck fat
- 1 tbsp Sugar
- Red cabbage: remove the stalk, defoliate and pluck the leaves by hand into pieces about the size of a euro. prefer to put on gloves for this. The whole thing takes so long that you start swearing for having started it.
- Caramelize the sugar in the pot, top up with apple juice, orange juice, port and red wine. Pour the spices into a tea filter or something similar and let them cook. Let cool completely and remove the spices. Put the marinade in the pot over the red cabbage and let it marinate for 4 days with a heavy object (foil over the red cabbage). Turn once a day, so everything from bottom to top.
- The evening before (5th day), drain the red cabbage marinade and collect. Heat the duck fat in a saucepan, sauté the red cabbage, season with salt. Deglaze with marinade and reduce, fill up, reduce, etc. The consistency becomes jam-like. Let stand overnight and boil again the next day.
- Why do I put stale red cabbage in here, which still takes so long? Because the sophisticated marinade and the long marinating time raise the red cabbage to a completely new culinary level. If you want, you can sweat finely diced shallots in duck fat.
