Onion and garlic soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 tbsp butter
  • 12 garlic cloves
  • 2 tbsp flour
  • 750 ml vegetable stock
  • 250 g double cream
  • 6 slices of toast
  • 1 tbsp lemon juice
  • 150 g cheese, grated (Gouda)
  • salt and pepper
  • nutmeg
  • oregano

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sauté the finely chopped onions in butter until translucent, then briefly fry the finely chopped garlic. Sprinkle the flour over the soup and let it brown, then deglaze with vegetable stock. Add the double cream. Simmer over low heat for 20 minutes. Purée the soup, stir in the grated Gouda cheese, and let it melt. Season to taste with pepper, salt, lemon juice, and nutmeg. Cut the slices of bread into small cubes and fry in butter until crispy. To serve, sprinkle the soup with oregano and serve with the bread cubes.
