Ingredients for 1 servings:

  • 1 lemon(s)
  • 2 bananas, peeled and chopped
  • 250 g orange(s), peeled, the white removed and cut into small pieces, collecting the juice
  • 250 g apples, with peel, cut into small pieces
  • 250 g carrot(s), peeled and chopped
  • 100 ml juice (multivitamin juice, 100% fruit content)
  • 1 pinch of citric acid or ascorbic acid (vitamin C)
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Multivitamin jam

Squeeze the lemon and reserve the juice, then add the citric acid. Quickly mix the banana and apple pieces with the lemon juice to prevent them from turning brown. Add the remaining fruit and vegetables and the reserved orange juice and puree everything in a food processor. Weigh the mixture and make up to 1 kg with the multivitamin juice (I usually need about 50 ml, depending on the size of the bananas). Add the gelling sugar and let it all sit for half an hour. Bring to a boil and simmer over high heat for 4 minutes while stirring. Pour into jars and turn them upside down for 5 minutes, then turn them upside down and let cool.
