Onion bread with gofio

Ingredients for 1 servings:

  • 360 ml buttermilk
  • 1 sachet of dry yeast for 500 g flour
  • 450 g wheat flour type 1050
  • 100 g gofio de millo (corn gofio)
  • 1 tsp, heaped salt
  • 1 tsp, heaped sugar
  • 1 tsp, heaped five-spice powder
  • 2 tbsp olive oil
  • 1 tbsp sesame oil
  • 150 g onion(s)
  • some flour for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 50 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours

The traditional Canarian product Gofio in a rustic bread with a special touch.

Dissolve the yeast with a teaspoon of flour in the lukewarm buttermilk, cover, and let rise in a warm place for 10 minutes. Mix the flour with the gofio, salt, sugar, and five-spice powder. Mix the oils. Pour the buttermilk and yeast into a bread maker pan, add the flour mixture, and pour the oil all around the edges. Start the dough program without baking. I set the proving time to about 70 minutes. If the dough becomes too dry, add a little water or buttermilk. Add the finely chopped onion to the bread maker at the scheduled time. Remove the very soft dough from the pan with heavily floured hands, using a dough scraper if necessary, and place it on floured baking paper. Use your hands to shape the dough into a round or oval shape, dusting the bread with a thin layer of flour all around. Place the loaf, lined with baking paper, in a baking pan, springform pan, oval bread pan, or on a baking sheet. Cut a slit in the middle of the bread lengthwise and cover and let rise in a warm place for another 30 minutes. Preheat the oven to 220°C (top/bottom heat). Place the bread in the oven. First lightly spray the bread, then thoroughly spray the oven walls with distilled water, and close the oven. This also works with tap water, but it will leave limescale. After 10 minutes, reduce the temperature to 200°C (400°F) and carefully release the steam. Bake the bread for another 30 to 40 minutes, until it begins to turn dark brown. Remove the bread from the oven and let it cool on a wire rack. This onion bread goes perfectly with hearty toppings such as Iberico ham, aged cheese, and Camembert, but also with jam, especially cactus fruit jam. Gofio is a flour made from grain that is toasted before milling. It has a slightly nutty flavor.
