Onion jam

Ingredients for 4 servings:

  • 500 g onion(s), red, peeled, weighed
  • 50 g butter
  • 2 tbsp sugar
  • 250 ml red wine, dry
  • 3 tbsp honey
  • 1 tbsp vinegar
  • 1 tsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Finely chop the onions and rinse thoroughly in a sieve under hot running water. Drain well. Sauté the diced onions in the hot butter without browning. Add the lemon juice, wine, salt, and sugar. Cover and simmer over low heat until tender. Then reduce the liquid in an uncovered pot over high heat. Now add the honey. Mix the cornstarch with the vinegar and use it to thicken the onion jam. While still hot, pour into twist-off jars and turn them upside down for about 5 minutes.
