Ingredients for 1 servings:
- 150 g salt
- 3 kg tomatoes, green
- 1 kg onion(s)
- 500 g sugar
- 250 g dates, dried, chopped
- 1 liter white wine vinegar, milder
- 2 tbsp mustard seeds
- 2 tbsp curry
- 1 tbsp cayenne pepper
- 1 tbsp turmeric (yellow root)
- 2 tsp paprika powder, sweet
- 1 tsp ginger, finely chopped

Working time approx. 1 hour; Total time approx. 1 hour
This way you can use the tomatoes that didn’t quite make it to ripening
Roughly chop the tomatoes and onions and salt overnight. If marinated for a longer time, the cooking time will be shortened, as the tomatoes and onions will soften. Drain the liquid. Simmer uncovered for 20-30 minutes with the tomatoes, onions, sugar, vinegar, and mustard seeds, then stir in the dates and spices. While hot, pour into clean jars. This amount will fill approximately six large screw-top jars.
