Ingredients for 4 servings:
- 6 slice(s) pork (comb slices), large, or 9 smaller
- 6 large onions, 8 can also be used
- Mustard, medium hot
- salt and pepper
- n. B. Black bread, crispy
Instructions

Ideal for feeding a whole crowd.
Line a roasting pan with aluminum foil, leaving a higher edge. Cut out the bones from the sirloin slices and wash the sirloin slices to remove any bone splinters. Peel the onions and cut them into approximately 5 mm thick slices. Line the bottom of the roasting pan completely with the onion slices. Season 2-3 sirloin slices, depending on their size, with pepper and salt on one side and then spread them generously with mustard. Place the sirloin slices, seasoned with the mustard side, on the layer of onions in the roasting pan. Pepper and salt the unseasoned side of the sirloin slices as well, and spread with mustard. Place another layer of onions on top. Repeat this process until you have three layers of meat. The top layer should again consist of onions. Cover the roasting pan with aluminum foil and fold over the excess foil edge to retain the juices. Cover the roasting pan and braise the dish in the preheated oven at 180°C (top and bottom heat) for at least 1 hour 30 minutes, or 2 hours is better, depending on the oven. To serve, slice fresh, crusty black bread, arrange the cooked meat slices with some onions on top, and enjoy. Optionally, you can serve it with mustard and a cold beer. The meat is wonderfully tender and practically melts in your mouth. If you’re very hungry, this recipe serves 4-6 people.
