Onion soup with cheese patties

Ingredients for 4 servings:

  • 1 tbsp oil
  • 600 g onion(s), in rings
  • ½ liter of water
  • ½ liter white wine
  • 2 tsp vegetable broth, instant
  • 2 slices of toast
  • 50 g Gruyère cheese
  • Salt and pepper, black
  • Sugar
  • 4 stalks parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat oil in a pan. Sauté onions until golden brown. Deglaze with 1/2 liter water and wine, stirring. Bring to a boil, stir in broth. Cover and simmer for about 10 minutes. Toast bread in a toaster. Cut 4 slices from each slice. Place on a baking sheet lined with parchment paper and sprinkle with cheese. Grill for 2-3 minutes. Season onion soup with salt, pepper, and sugar. Ladle into soup bowls and serve with 2 slices and parsley.
