Onion vegetables with apple

Ingredients for 1 servings:

  • 2 onions, approx. 200 g
  • 1 apple, approx. 170 g
  • 200 ml vegetable stock
  • 1 tsp, levelled sugar, brown
  • ½ tsp marjoram, shredded
  • ½ tsp lovage, shredded
  • 1 tbsp balsamic vinegar
  • Salt and pepper, white
  • Margarine or sunflower oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Peel the onion and slice into rings. Quarter the apple, remove the core, then cut into eighths and slice the pieces. Heat margarine or oil in a large pan, add the brown sugar and stir until dissolved. Add the onion rings and fry until they are a nice brown color. This takes about 15 minutes. Add the apple slices and fry for 5 minutes. Stir in a little salt and pepper and pour in the vegetable stock. Add the marjoram and lovage and let the whole thing simmer for 10 to 15 minutes. Stir frequently and add a little more stock if necessary. Stir in the balsamic vinegar, season to taste, and serve. The onion vegetables taste wonderful with bratwurst and mashed potatoes.
