Low-carb
For the Oopsies, separate the eggs. Beat the egg whites with a little salt until stiff. Mix the egg yolks with the quark and fold in the egg whites. Place about 12 dollops of the mixture on a baking sheet and bake at 150 degrees Celsius for 15-20 minutes, until the Oopsies are lightly browned. They will rise quite a bit at first, but will collapse after baking. Once the Oopsies have cooled, spread them with cream cheese, grate fresh horseradish over them, and top with salmon. Finally, arrange dill-seasoned cucumber slices on top.
