Ingredients for 2 servings:
- 300 g natural yogurt
- 1 clove(s) garlic
- 1 pinch of salt
- 1 bunch of chives
- 200 g couscous
- 1 tsp vegetable broth powder
- 1 orange(s), untreated, juice and zest
- Pepper, preferably orange pepper
- some salt
- 1 tbsp syrup (orange syrup with cardamom), from the database
- 3 tbsp Balsamic vinegar, white
- 1 tbsp olive oil, mild
- 1 pinch of salt
- some pepper, preferably orange pepper, freshly ground
- 2 portions of arugula or lamb’s lettuce
- 60 g peanuts, roasted and salted
- 6 g Thai basil, approx.
- 6 tbsp peanut oil
- ½ lemon(s), juice
- some pepper, freshly ground
- 1 handful of pomegranate seeds
- 100g chorizo
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
served with salad with orange vinaigrette, chorizo and/or pomegranate seeds
Mix the yogurt with a pinch of salt, a small crushed garlic clove, and some freshly ground pepper. Finely chop the chives and mix in. Chill and let it infuse well. For the peanut pesto, puree all ingredients with a hand blender, adding enough oil until the desired consistency is reached. Season with salt and pepper to taste. For the orange vinaigrette, mix all ingredients well in a shaker or screw-top jar. Wash and dry the lettuce, and tear into bite-sized pieces if desired. Juice the orange. Place the couscous in a bowl, mix well with the orange peppercorns, orange zest, and vegetable stock powder. Pour over salted water mixed with the orange juice according to the package instructions, and let it swell. Stir the swollen couscous and season with salt. Mix the vinaigrette and lettuce well. Remove the pomegranate seeds and/or fry the diced chorizo in a little oil until crispy. Serve the peanut pesto, yogurt, and salad with the couscous. Briefly drain the cooked sausage on kitchen paper. Sprinkle the chorizo and/or pomegranate seeds over the couscous. It’s perfect as a main course, for example, as a summer meal, for dinner, and in small quantities, as an appetizer.
