Ingredients for 4 servings:
- 1 kg pork belly, boneless
- ½ tsp ground blue fenugreek
- ½ tsp ginger powder
- ½ tsp fennel seeds, ground
- 1 tsp garlic powder
- ½ tsp caraway powder
- ½ tsp coriander powder
- ½ tsp mustard seeds, ground
- ½ tsp cane sugar
- ½ tsp salt
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes
Score the pork belly skin in a diamond shape. Mix all ingredients together, coat the pork belly in the mixture, and rub well. Preheat the grill to indirect medium heat. Grill skin-side down for about 1 hour, then turn and grill for another 1 hour.
