Orange Vanilla Cookies

Ingredients for 1 servings:

  • 1 orange(s), untreated
  • 300 g butter, soft
  • 100 g powdered sugar
  • 1 pinch of salt
  • 1 vanilla pod(s), pulp
  • 2 egg yolks
  • 400 g flour
  • 100 g butter, soft
  • 100 g powdered sugar
  • 10 ml orange blossom water

makes about 40 cookies

Grate the orange zest. Beat the softened butter, powdered sugar, a pinch of salt, vanilla pulp, and orange zest with a mixer for about 4 minutes until very fluffy, then add the egg yolk and fold in. Briefly mix in the sifted flour with a mixer so that the flour combines with the butter mixture; do not mix for long. This will make the cookies particularly crumbly. Fill the dough into a piping bag and pipe even-sized dots onto a baking sheet lined with baking paper. Bake the dots at 180°C on the middle shelf for 10-12 minutes until golden brown. Allow the cookies to cool completely. For the filling, beat the butter, powdered sugar, and orange blossom water with a mixer until fluffy. Fill the cream into a piping bag and pipe a little cream onto the flat side of the dots. Place a second cookie, flat-side down, on top and press down lightly. Makes about 40 cookies.
