Oriental one-pot pasta with apple

Ingredients for 2 servings:

  • 1 carrot(s)
  • 1 garlic clove(s)
  • 1 bell pepper(s)
  • 1 lime(s), the juice
  • 3 tsp peanut butter
  • 2 small apples
  • 6 g peanuts
  • 200 ml coconut milk
  • 300 ml vegetable stock
  • 120 g smoked tofu
  • 170 g whole wheat penne
  • 4 tsp soy sauce
  • salt and pepper

Instructions

Working time approx. 12 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 22 minutes

Vegetarian

Finely chop the garlic. Dice the bell pepper, carrot, and tofu and place everything in a pot. Add the vegetable broth, penne, coconut milk, soy sauce, and peanut butter. Finely chop and mash the apples, and add them to the pot. Heat the pot over medium heat and simmer until the noodles are done. Season with salt and pepper to taste. Roughly chop the peanuts and scatter them over the dish. Sprinkle with lime juice. 800 kcal per serving.
