Oriental quinoa salad

Ingredients for 2 servings:

  • 100g quinoa
  • ½ onion(s)
  • 2 dates
  • 1 handful of almonds
  • 1 clove(s) garlic
  • 1 piece(s) ginger
  • ¼ pomegranate
  • some coconut oil or other fat
  • 1 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Dice the onions, garlic, and ginger and fry them in a pan with the coconut oil for a few minutes until the onions are translucent. Add the curry, turmeric, and cumin and fry for about 2 more minutes. Add the quinoa to the pan and immediately deglaze with twice the volume of water. Simmer for 15 minutes. Meanwhile, dice the dates, roughly chop the almonds, and remove the seeds from the pomegranate. Once the quinoa is ready, mix it with the remaining ingredients and season the salad with salt and pepper.
