Original Italian Aioli Spaghetti

Ingredients for 2 servings:

  • 400g spaghetti
  • 1 tbsp olive oil
  • 2 Pepper, red
  • 2 peppers, green
  • 8 garlic cloves
  • 2 bunch parsley, flat
  • 150 ml olive oil
  • 100 g Parmesan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the spaghetti in salted water with a splash of oil until al dente. Drain and refresh. Drain well. For the sauce, halve the peppers, remove the seeds and white pith, wash the flesh, and chop very finely. Peel and finely dice the garlic. Briefly run the parsley under water, pick off the leaves, and chop them finely. Heat olive oil in a pan and briefly fry the peppers and garlic. Add the spaghetti, stir, and heat through. Stir in the parsley, sprinkle with Parmesan cheese, and serve immediately.
