Ingredients for 4 servings:
- 2 kg potatoes, waxy
- 3 tomatoes
- 4 eggs, hard boiled
- 2 m.-sized onion(s)
- 1 jar of pickles
- 1 jar mayonnaise, large
- 2 tbsp mustard, medium hot
- 2 tbsp ketchup
- ¼ tsp curry powder
- 2 tsp paprika powder, sweet
- Salt, to taste.
Instructions
Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes
Boil the potatoes in their jacket potatoes until soft. Rinse and peel. Let cool and slice. Remove the ends of the gherkins and dice as finely as possible. Dice the tomatoes and peel the onion and also dice them. Dice the eggs and add everything to the potato slices. In a bowl, mix the mayonnaise with the paprika, curry powder, mustard, and ketchup, then fold into the salad. Add salt and let stand for at least 4 hours, or overnight if preferred. Tip: If you like, you can also add a finely chopped apple and a finely chopped herring. This tastes particularly delicious.
