Ouzo Prawns Au Gratin with Feta

- 750 g Shrimp peeled deveined
- 6 Tomatoes
- 2 Onions
- 2 Garlic cloves
- 2 Spring onions fresh
- 5 tbsp Olive oil
- 75 ml Ouzo
- Salt
- Pepper from the grinder
- 2 tsp Oregano
- 200 g Feta
- Preheat the oven to 225 ° C.
- Wash, quarter and core tomatoes. Cut the pulp into cubes. Peel the onions and garlic, dice both finely. Clean and wash the spring onions and cut into fine rings.
- Rinse the shrimp, pat dry and remove the dark intestine if necessary. Heat 1 – 2 tablespoons of olive oil in a coated pan. Fry the prawns in portions for 3-4 minutes while turning. Remove.
- Fry the onions, garlic and tomatoes in the remaining frying fat while stirring for 3–4 minutes. Add the prawns again. Deglaze with ouzo and bring to the boil. Season with salt and pepper. Stir in oregano.
- Put the shrimp and vegetable mixture in a baking dish. Crumble the feta over it and bake for about 20 minutes.
