Oven-baked fried potatoes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 kg onion(s)
  • 125 g bacon, smoked or raw ham
  • Salt and pepper from the mill
  • butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and onions. Cut or tear the bacon or ham into thin strips. Slice the raw potatoes and roughly chop the onions. Fill a buttered casserole dish (I use a coated aluminum dish) with the potatoes and onions. Season with salt and pepper and mix well, then place in the preheated oven (top/bottom heat 230°C). After 20 minutes, turn everything over. When most of the liquid from the potatoes has evaporated, add the bacon/ham and mix. Place knobs of butter on top. Since every potato variety is different (depending on the variety and age), remove and turn them occasionally. The fried potatoes are done and at their best when they are soft on the inside and brown and crispy on the outside. We serve them with a fried egg and a green salad.
