Oven-baked okra with tomatoes and ginger

Ingredients for 2 servings:

  • 400 g okra
  • 7 tbsp olive oil
  • 4 garlic cloves
  • 20 g ginger, finely chopped
  • 2 tbsp tomato paste
  • 5 m.-large tomatoes, ripe, finely chopped
  • some chili flakes
  • 2 tsp sugar
  • Salt and pepper, freshly ground black pepper
  • some water
  • 1 tbsp coriander greens, chopped (optional)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Trim the okra and remove the stems. Mix 5 tablespoons of olive oil, salt, and pepper, pour over the okra, and place them side by side on a baking sheet lined with parchment paper. Bake in the oven for about 20 minutes, until just cooked through. In the meantime, prepare the sauce. Heat the remaining olive oil. Add the garlic, ginger, and chili flakes and fry for about 1 minute, then add the tomato paste and fry briefly. Add the tomatoes, salt, sugar, and pepper and simmer uncovered for about 10 minutes, until the sauce has thickened slightly. If the tomatoes are too dry, add as much water as necessary and reduce. Divide the tomato sauce among plates, arrange the okra on top, sprinkle with chopped cilantro, and serve. Baguette goes very well with it; a steak will also work in a pinch.
