Oven-baked potatoes with fried eggs

Ingredients for 2 servings:

  • 500 g potatoes
  • 4 gherkins
  • 4 eggs
  • 4 tbsp crème fraîche
  • 2 tbsp vegetable oil
  • 1 tsp paprika powder
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the potatoes and cut into thin slices, rinse thoroughly under running water, spin dry, and then place them in a bowl. Pour the oil over them, add salt, pepper, and paprika, and mix everything well. Spread the potato slices evenly on a baking sheet lined with baking paper and bake in the oven at 180°C (top/bottom heat) for about 25 to 30 minutes, until crispy. Fry the eggs in a pan until they’re fried and arrange on plates with the fried potatoes, gherkins, and crème fraîche. Sprinkle the potatoes with a little more salt. It tastes even better with fresh herbs, according to your taste, sprinkled on top.
