Ingredients for 4 servings:
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 1 zucchini
- 1 eggplant(s)
- 1 onion(s), red
- 5 cherry tomatoes
- 8 garlic cloves
- 1 can of tomatoes, chopped
- ½ blood orange(s), the juice
- Herb salt, smoked
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Roughly dice the vegetables, peel the onion and cut into eighths. Peel the garlic. Place everything on a deep baking sheet and bake in the oven at 200°C until the vegetables are golden brown (approx. 30-45 minutes). Heat the tomatoes in a pan, add the orange juice, and season with herb salt. Add the vegetables from the oven. Serve with ciabatta bread.
