Ingredients for 1 servings:

  • ½ bell pepper
  • 6 m.-large mushrooms
  • 1 small sweet potato(s)
  • ½ zucchini
  • ½ onion(s), red
  • 3 tbsp oil
  • salt and pepper
  • n. B. Thyme
  • e.g. parsley
  • n. B. Herbs, Italian

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Cut the bell peppers, mushrooms, and sweet potato into medium-sized cubes. Slice the zucchini and onion. Toss the vegetables with about 2-3 tablespoons of oil and season with salt, pepper, and herbs. Spread the vegetables on a baking sheet, lightly greasing it if necessary, and bake for about 30 minutes. If desired, grill the vegetables for about 3-5 minutes towards the end of the cooking time to crisp up the vegetables. This dish tastes great with cream cheese/cottage cheese.
