Ingredients for 1 servings:
- 250 g cane sugar
- 250 g soy yogurt (yogurt alternative)
- some lemon peel, grated
- 250 g flour
- 100 g sunflower oil
- 80 ml lemon juice
- 1 pinch of salt
- 1 packet of baking powder
- ¼ tsp baking soda
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes
Preheat the oven to 180°C. Combine the sugar and yogurt in a bowl. Add the lemon zest and flour and stir well. Mix in the oil and lemon juice. Finally, add the salt, baking powder, and baking soda. Grease a 22 cm loaf pan with oil or margarine and pour in the batter. Bake the cake in the preheated oven at 180°C for 40-50 minutes.
