Oven-baked vegetables with cheese sauce

Ingredients for 4 servings:

  • 2 kohlrabi
  • 8 carrots
  • 350 g potatoes
  • 400 g mushrooms
  • 1 bunch of parsley
  • salt and pepper
  • 8 tbsp cheese, grated
  • 375 ml milk
  • 6 tbsp cream cheese with herbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the kohlrabi and carrots into strips, dice the potatoes, and quarter the mushrooms. Finely chop the parsley. Cook the kohlrabi, carrots, and potatoes for about 5 minutes to reduce their hardness. If you prefer firm vegetables, you can skip the pre-cooking. Layer all the vegetables in a baking dish, season with salt and pepper, and sprinkle with parsley. Mix the cheese, milk, and cream cheese, season with salt and pepper to taste, pour over the roasted vegetables, and bake in a preheated oven at 180°C for 40-45 minutes.
