Oven pancakes à la Mangalica

Ingredients for 1 servings:

  • 300 ml soy milk (soy drink) (vanilla flavor)
  • 300 ml milk (rice milk vanilla flavor)
  • 200 g spelt flour (type 1050)
  • 50 g corn flour
  • 3 eggs
  • some salt
  • 1 tbsp sugar
  • 1 pinch(s) vanilla powder
  • 1 pinch(s) cinnamon powder
  • 1 large apple
  • possibly butter for the tray

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Apple pancakes with spelt and corn flour, soy and rice milk

Mix all ingredients into a smooth batter and pour onto a well-greased baking sheet (high sides, at least 2.5 cm). You can also omit the fat and use parchment paper. Peel the apple, cut it into thin slices, and spread it on the pancake batter. Place the sheet in an oven preheated to 200°C (fan oven). After about 20 minutes, turn off the oven and continue baking for about 10 minutes in the residual heat. Remove from the oven and cut into pieces; the pancakes are now ready. The pancakes are not particularly sweet. We served them with a little caramel and vanilla sauce made from soy milk to finish them off. I let the baking sheet heat up in the oven and then spread the butter on it. The batter may bubble up during baking (looks like a stormy sea), but it will collapse later.
