Ingredients for 2 servings:
- 130 g wholemeal flour
- 1 tsp, heaped baking powder
- 130 ml milk
- 130 ml mineral water
- 1 egg(s)
- Sweetener, liquid
- e.g. cinnamon
- 1 vanilla pod(s), including the pulp
- 300 g apples, sweet variety
Instructions
Working time approx. 5 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Whisk together flour, baking powder, milk, sparkling water, egg, and liquid sweetener. Add cinnamon if desired, scrape the seeds from the vanilla pod, and add them as well. Let the batter stand for 15 minutes. Meanwhile, chop the apples and add them to the batter. Pour everything into a casserole dish about half the size of a baking sheet and bake for 20-25 minutes in a preheated oven at 180°C (top/bottom heat). Of course, you can vary the fruit; it also tastes good if you add raisins and sunflower seeds. The sky’s the limit.
