Oven pulled pork – tender pork in a burger

Ingredients for 6 servings:

  • 1 kg pork belly
  • BBQ sauce
  • 8 tbsp coleslaw or coleslaw
  • 3 juniper berries, crushed
  • 3 bay leaves
  • 1 tsp fennel seeds
  • 3 allspice berries
  • 3 carnations
  • 3 cinnamon sticks
  • 1 onion(s), red
  • 1 carrot(s)
  • 1 leek(s)
  • 6 rolls (e.g. brioche buns)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 hours 30 minutes; Total time approx. 6 hours 50 minutes

Heat water and cut the vegetables into pieces. Cook the pork belly with the vegetables and spices in boiling water for at least 3 hours. Then remove the meat from the pot, place it on a baking tray, and bake in the oven at 120 degrees Celsius for at least 3.5 hours. When the bones come out of the meat easily, the pulled pork is done and ready to serve. To do this, remove the bones from the meat, remove the bacon, and shred the pulled pork in the traditional way with a fork. Mix it in a bowl with the BBQ sauce and serve it in buns with the coleslaw.
