Pak Choi and Potato Stir Fry

Ingredients for 4 servings:

  • 1 head of pak choi
  • 4 large potatoes
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 cup sour cream
  • 150 ml water
  • Vegetable stock powder
  • salt and pepper
  • some oil or butter
  • possibly flour or sauce thickener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely dice the onion and garlic and sauté in a little fat until translucent. Wash and trim the pak choi. Cut the green leaves into strips. Dice the stalks. Peel and dice the potatoes. Add the pak choi and potatoes to the onions and sauté briefly. Sprinkle with stock and deglaze with water. Stir everything again and simmer for 15 to 20 minutes. Add the cup of sour cream and season with salt and pepper. If it’s too runny, thicken again with flour or a sauce thickener. Serve with sausages or meatballs.
