Ingredients for 4 servings:
- 1 cup quinoa
- 500 g pak choi
- 1 tbsp, heaped onion(s), diced
- 1 tbsp garlic, finely chopped
- 1 tbsp red chili pepper(s)
- 1 tbsp ginger root, finely chopped
- 50 ml broth
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Cook the quinoa according to the package instructions. Mix the quinoa with the onion, garlic, chili, and ginger. Trim the stems from the bok choy leaves and reserve them for another purpose. Wrap one teaspoon of the quinoa mixture in each leaf and place in a baking dish. Pour over 50 ml of broth. Cook in the covered oven (200°C) for about 20 minutes.
