Pan-fried Dishes: Scrambled Eggs Go with Salmon and Mushrooms

- 6 Pc. Free range eggs
- 200 g Smoked salmon
- 100 g Fresh mushrooms
- 1 Pc. Fresh onion
- 1 tbsp Onion cream
- 4 tbsp Rapeseed oil
- Sea salt from the mill
- Pepper Parieser or Bunter ground
- First, peel the onion, clean the mushrooms and cut both into slices. Cut the salmon into cubes. Wash the chives, shake dry and cut into 1 cm long rolls.
- Distribute the oil in 2 tablespoons each in 2 pans, heat and put the onion rings in one pan and the onion cream in the second pan, divide half of the mushrooms into the pans and sauté until glazed. Add the smoked salmon and also sauté briefly.
- In the meantime, put 3 eggs each in a measuring cup and season with salt and pepper, whisk with the whisk and add to the salmon in the pan, add the chives, stir and let set and stir well every now and then so that nothing runs off.
- Serve the finished scrambled eggs in the pan, it will stay warm longer. Fresh bread and rolls of all kinds can be served as a side dish.
