Ingredients for 6 servings:

  • 12 pancakes
  • 500 g cream cheese
  • 2 egg yolks
  • 2 egg whites
  • 1 tbsp parsley, chopped
  • pepper
  • 2 eggs
  • 1 cup of cream
  • some nutmeg
  • Salt
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the cheese, egg yolks, pepper, and parsley. Whisk the egg whites until stiff and fold into the cheese mixture. Grease a round baking dish and place one of the pancakes in it. Spread the remaining pancakes out, spread with the cheese mixture, and roll them up. Carefully cut each roll into 3-4 equal pieces and place upright in the dish. Pour the egg white mixture over the pan and bake in a preheated oven at 200°C for 30 minutes, until the pancake is light brown. Serve with iceberg lettuce or other seasonal lettuce.
