Pancakes Filled with Ham, Tomatoes, Rocket and Asparagus

Ingredients
 

for the pancakes

  • 250 g Flour
  • 4 Eggs
  • 1 tsp Salt
  • 1 pinch Sugar
  • 375 ml Milk
  • 125 ml Sparkling water

for the filling

  • 1 kg Cooked fresh white asparagus
  • 4 Sch. Cooked ham
  • 50 g Rocket cleaned, washed and dried
  • 3 -4 Small vine tomatoes
  • 200 ml Homemade or bought Hollandaise
  • Salt pepper
  • Ooptionally some grated cheese

Instructions
 

  • Make a pancake batter from the first 6 ingredients. Let rest a little. Or you can make it the way you like it best.

Preparation for the filling

  • Peel and cook the asparagus. Either in the oven (I prefer that) for 35 minutes at 180 ° hot air in aluminum foil, or cook in salted water for 15-20 minutes as usual. In the meantime, cut the tomatoes into small cubes, add a little salt and pepper. Prepare the sauce. Prepare rocket, ham and possibly grated cheese
  • Bake 4 pancakes in a large pan. Possibly keep warm in the oven.
  • Now cover each pancake with a slice of ham. Put some rocket and 1/4 of the tomato cubes on the lower half. Also put the asparagus 1/4 on each pancake. Sprinkle with a little cheese (doesn't have to be, but it tastes very good), spread the hot sauce on top. Fold the top half over and serve immediately.
  • Then just enjoy. It tastes really, really good.
