Ingredients for 3 servings:

  • 8 tbsp oil
  • salt and pepper
  • 1 tbsp turmeric
  • 1 tbsp coriander
  • Paprika powder, sweet
  • 4 tomatoes
  • 2 onions
  • 6 m.-sized potatoes
  • 2 carrots
  • 3 pangasius fillets, 125 g each

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

For the seasoning sauce, mix the oil, 1 teaspoon each of salt and pepper, turmeric, coriander, and sweet paprika. Wash, trim, and slice the tomatoes. Peel the onions and cut into quarters or rings (I used quarters). Peel and slice the potatoes and carrots, and place them in a baking dish. Wash the fish, pat dry, and place on top of the potatoes. Pour 3/4 of the seasoning sauce over it. Arrange the tomato slices and onions on top, then pour the remaining sauce over the top. Cover the baking dish with aluminum foil and bake for 50-60 minutes at 200°C.
