- 800 g potatoes, small with skin
- 400 g sea salt, coarse
- Water

Canarian shriveled potatoes
It’s best prepared in a wok or a similar cooking vessel where nothing sticks and you can stir it easily! Wash the potatoes. Cover them with water in a pot, add the sea salt, and stir. Cook until the water has evaporated. Let the potatoes stand on low heat for a few minutes to dry and wrinkle, tossing them several times with the lid on. When they’re dry and wrinkled, serve immediately on a cloth, as they’ll rehydrate when covered. Serve with Canarian mojo or another herb-garlic dip. Goes well with grilled fish, meat, or as a fondue side dish.
