Paprika and leek pot with beef strips

Ingredients for 4 servings:

  • 250 g leek
  • 600 g beef from the nut
  • 2 m.-sized onion(s)
  • 2 bell peppers, red
  • 2 tbsp clarified butter
  • 2 tbsp flour
  • 500 ml beef stock
  • 250 ml white wine
  • 1 bunch of parsley
  • Salt and pepper, black

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Trim and wash the leeks and cut into rings. Wash the meat, pat dry, and cut into thin strips. Peel and finely dice the onions. Trim, wash, deseed, and dice the bell peppers. Heat clarified butter in a saucepan. Add the meat, bell peppers, and onions to the pan and sauté for 10 minutes. Add the leeks, dust with flour, pour in the stock and wine, and simmer for another 15 minutes. Meanwhile, wash and finely chop the parsley, and add it to the pan. Season with salt and freshly ground black pepper. Serve with farmhouse bread.
