Paprika – bacon – sauce with dried tomatoes

Ingredients for 3 servings:

  • 2 bell peppers, yellow or red
  • 125 g bacon, diced
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 handful of tomatoes, dried
  • 2 tbsp tomato paste
  • 2 tbsp mild ajvar
  • Vegetable broth, instant or homemade soup seasoning
  • ½ cup sour cream
  • salt and pepper
  • Worcestershire sauce
  • rosemary
  • Thyme
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Blanch the tomatoes in boiling water. Let stand for about 30 minutes. Meanwhile, halve the peppers, remove the seeds and seed stalks, and cut into strips. Chop the onion and garlic. Squeeze the water out of the soaked tomatoes and cut into pieces. Don’t discard the soaking water! Heat oil in a large pan. Sauté the onion until translucent and add the bacon. Sauté for a while. Add the peppers and garlic and sauté over low heat for about 5 minutes. Now add the tomato paste and the soup seasoning or vegetable stock powder and mix well. Deglaze with the soaking water (about 250-300ml). Season to taste with ajvar, salt (be careful, as the bacon is already quite salty), pepper, rosemary, thyme, and Worcestershire sauce. Simmer for about 15 minutes. Stir in the sour cream and season again if necessary. The sauce goes well with rice, pasta, or gnocchi.
