Paprika-halloumi-pineapple skewers with barbecue sauce à la Gabi

Ingredients for 4 servings:

  • 250 g Halloumi, cut into not too small cubes
  • 3 tbsp mustard, sweet
  • 2 tbsp tomato paste, 3-fold concentrated
  • 5 tbsp pineapple juice
  • 3 tsp balsamic vinegar, dark
  • 1 tbsp olive oil
  • 1 tsp thyme, dried
  • Salt and pepper, black from the mill
  • Paprika powder, sweet
  • 3 bell peppers, red, green, orange, cut into squares
  • ½ pineapple, cut into cubes

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Combine mustard, tomato paste, pineapple juice, balsamic vinegar, and olive oil and season with thyme, salt, pepper, and paprika. Marinate the cheese cubes in this mixture. Thread the peppers, cheese cubes, and pineapple alternately onto 12 wooden skewers and grill for about 5-10 minutes, turning occasionally. Reduce the cheese marinade in a saucepan to a thick sauce and serve with the skewers.
