Parsley potatoes

Ingredients for 2 servings:

  • 500 g potato(s), waxy
  • 1 onion(s)
  • 1 tbsp, heaped clarified butter
  • 4 sprigs of parsley
  • ½ tsp salt
  • 1 pinch of pepper
  • 1 pinch of nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Boil the potatoes in salted water for about 30 minutes, then drain and peel while still warm. Peel and dice the onion and chop the parsley. Place the clarified butter in a saucepan and sauté the onion and parsley. Reduce the heat. Grate the potatoes using a coarse grater, just as you would for potato pancakes. Season the mixture and fry with the onion and parsley for about 10 minutes, stirring frequently to prevent it from sticking.
