Broccoli and minced meat soup

Ingredients for 2 servings:

  • 250 g minced meat, mixed
  • 1 m.-sized onion(s)
  • 1 large potato(s)
  • 1 broccoli, fresh or frozen
  • Sea salt and pepper, preferably from the mill, normal is also fine
  • 200 g cream cheese spread

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the onion and cut into small pieces/cubes. Peel the potato and also cut into small, thin strips; you can also grate it, if desired. Brown the minced meat in hot oil, then add the onions and season with salt and pepper. Once everything is nicely browned, add water to the pot; it should be about 1-2 cm high above the minced meat and onion mixture, then bring everything to a boil. Now add the potatoes and simmer for about 10 minutes. Meanwhile, separate the tips/florets from the broccoli and add them, and let the soup simmer for another 5 minutes. Now add the cream cheese and bring to a boil. Season the soup again with salt and pepper and serve. Tip: Stir constantly to prevent burning!
