Parsnip mashed potatoes

Ingredients for 2 servings:

  • 400 g parsnip(s), peeled, sliced
  • 250 g potatoes, peeled and cut into small cubes
  • 40 g butter
  • n. B. salt and pepper, white
  • e.g. nutmeg, freshly grated
  • 2 tsp fresh parsley, chopped
  • cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Place the parsnip slices and potato cubes in a pot of salted water. Bring the vegetables to a boil, then cover and simmer for about 20 minutes. Drain the water and let the pot cool down on the stovetop for a few seconds. Mash everything with a potato masher. Add the butter, salt, pepper, and nutmeg, and stir in. Then fold in enough cream to make the mashed potatoes until it reaches the desired consistency. Season to taste and add more seasoning if desired. Sprinkle the mashed potatoes with parsley and serve.
