Ingredients for 1 servings:
- 180 g sugar
- 4 egg yolks (size L)
- 1 tsp flour
- 375 ml milk
- 200 ml passion fruit syrup (concentrate)
- 250 ml double cream
- 1 packet of vanilla sugar (bourbon vanilla sugar)

Bring the milk to a simmer in a saucepan. Meanwhile, whisk the 4 egg yolks into a mixing bowl. Add the sugar and whisk until the mixture turns light yellow. Now add the flour and stir. Slowly pour the hot milk into the sugar-egg-flour mixture and mix. Pour everything into the saucepan and whisk over low heat (do not let it boil!) until the mixture thickens slightly (this takes about 5 minutes). Remove the pan from the heat and pour the hot sauce through a sieve into a clean bowl. After it has cooled slightly (I wait about 5-10 minutes), add the passion fruit concentrate (available at Brazilian stores), the double cream, and the vanilla sugar, and stir to combine. Let the mixture cool completely (ideally overnight) and only then prepare it in the ice cream maker according to the manufacturer’s instructions. It will probably work without an ice cream maker, but you’ll need to stir it regularly while freezing to make sure it’s nice and creamy.
