Ingredients for 3 servings:

  • 500 g tomatoes
  • 150 g bacon
  • 1 onion(s)
  • 1 tbsp oil (preferably olive oil)
  • 100 ml white wine
  • 400 g pasta (e.g. bucatini, spaghetti)
  • 50 g cheese, grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the tomatoes crosswise, blanch them, peel them, remove the seeds, and roughly dice them. Slice the bacon, then cut them into small squares. Finely dice the onion. Heat the oil in a pan. Sauté the bacon and onions without browning. Deglaze with the white wine and bring to a boil. Stir in the diced tomatoes and season with salt and pepper. If desired, add finely chopped parsley and cayenne pepper. Simmer for about 15 minutes over low heat. Cook the pasta until al dente. Drain and toss with the sauce. Sprinkle with cheese (grated pecorino is typical) and serve.
