Pasta alla Burrata

Ingredients for 2 servings:

  • 400 g spaghetti, rigatoni or pasta of your choice
  • 800 g cocktail tomatoes
  • e.g. Burrata
  • 200 g Parmesan
  • 40 g fresh basil
  • 2 garlic cloves
  • some olive oil
  • Salt
  • some pasta water if needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Quick and easy.

First, boil the pasta water. Once it’s boiling, add salt and the pasta. Then heat a little olive oil in a pan. Peel the garlic, press it down, and sauté it in the oil. Meanwhile, halve the cherry tomatoes and add them to the pan. Add a little salt. Cook until they’re nice and soft. Place the mixture in a tall bowl along with the burrata and blend with a hand blender until smooth. If the sauce becomes too thick, thin it with a little more pasta water. Dice the Parmesan and blend it in a blender along with the basil. Once the pasta is al dente, drain it and add it to the sauce. Serve on plates, sprinkle with the Parmesan and basil mixture, and enjoy.
