Ingredients for 4 servings:
- 200 g pasta
- 1 kg asparagus, white
- 200 g tomatoes
- 2 tbsp almond slivers
- 4 tbsp oil
- 3 tbsp wine vinegar
- ½ tsp apricot jam
- some tarragon, dried
- salt and pepper
- possibly breakfast bacon, fried crispy
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes
Cook the pasta according to the package instructions. Trim and peel the asparagus and cut into bite-sized pieces. Cook in salted water for approximately 10-15 minutes. Dice the tomatoes. Roast the almonds in a dry pan. Combine the pasta, asparagus, tomatoes, and almonds. Mix together the vinegar, oil, jam, salt, pepper, and tarragon. Add to the salad and mix. If desired, arrange the bacon on top of the salad.
